A story about Migration

Soul Kitchen is an ode to the Arab diaspora that spread through Latin America from the mid 19th century.

People fled their troubled homeland leaving everything behind, but one thing: The recipes and culture that turned every new harbor into a home.

From Buenos Aires to Mexico City, Levantine cuisine quickly made its way across the continent, reinventing itself with local ingredients and influenced by every region: Migration inspired creativity.

Shawarma inspired Tacos al Pastor; Halawa inspired Marzipan; Sambosic inspired Empanadas

While Yerba Mate found its way from Latin America to become a standard beverage across Arab homes.

Soul Kitchen evokes the ingredients, flavors and cultural exchange that shaped this journey within every single bite and every sip.

A fable about the Bird 

There was once a Jackdaw who just didn’t fit in with the rest of his flock.  No one could put their beak on it but that bird sure liked to stand out.

Our Jackdaw liked that so much, he learned how to act like all the birds. His favorite thing to do was to collect any of their old feathers and wear them to spice up his act.

With time however, the other Jackdaws got angry. They didn’t like that he was always trying to be different. They’d say “Birds of the same feather should flock together”. And with that, they destroyed his collection of feathers.

With only one feather left, our Jackdaw was kicked out. After a long journey, he found a beautiful oasis. Its glittering waters and arching palm trees were so inviting that he began to sing and dance. Before he knew it, all the birds living there came out to applaud and join him.

They all agreed that the Jackdaw was one of their own and could stay as long as he liked, even offering new feathers for the Jackdaw’s collection! The Jackdaw learned he can belong. Trilling with glee, he declared: 

“Birds of different feathers can groove together”
